A very dry sparkling wine that is a modern take on the traditional Cremant de Bordeaux style. Having converted to organic viticulture by the end of 2017, the Cabernet Sauvignon grapes from our 0.5 hectare site are hand-picked in small crates and then gently pressed in a pneumatic wine press, carefully managed in a very controlled environment to preserve the delicate aromas. As we do with our still Chateau Puynard Rosé, the free-run wine is cool fermented in stainless steel vats. The second fermentation, how the bubbles are formed (“prise de mousse”), is the traditional Champagne method with disgorgement after 8 months on the lees. This occurs in cool caves in Saint-Emilion for a slow second fermentation to develop complexity of flavour but also to retain freshness of acidity. At only 1.5 grams of residual sugar, the sparkling wine is extra brut in style. Only 2000 bottles, it has pretty red fruit with lively bubbles that zip across the palate to a mouth-watering finish.
